Delicioso: A Simple Cinnamon Chips Recipe Perfect For the Afternoon Snack Appetite

Today was a good day – the kids went back to school for the winter holiday break, and there was something back in my air of calmness and control.  I think by lunchtime I was feeling a bit of guilt in my inner happiness for having the day just to myself … I wondered how their first day back was, and if they were spending the majority of their day happy, too. I had an idea – I’ll make them something sweet, but unique, for an afternoon school snack!  These cinnamon chips instantly came to mind because cinnamon is the aroma that tends to find itself in many things over the winter period … and us Texans love our chips!  And, voila … it didn’t take much to decide this was THE snack 🙂 With ingredients you probably have already in the refrigerator, this 15-minute recipe is delicioso … in fact, I had to make 3 batches because I had to eat the entire first batch myself … making sure…

Mini Quiche: The Go-To Entertainment Recipe For a Quick, Yet Pleasing Finger Food

Have you ever gotten yourself in a time-bind?  You know … that moment when you realize you have guests coming over in about an hour and you haven’t even got food yet prepared to serve them?  I was raised in a manner to always have something to offer – perhaps it’s that southern hospitality charm that is tradition in the deep south of Texas, but in moments where the clock is against you, it sometimes feels more like a curse! Not too long ago, I had offered to co-host a Get Together with one of my dearest friends. And, like any friend should do, I offered to help with the food.  No biggie – I had this!  I already had it figured out – I was going to order mini quiche from a fabulous personal chef acquaintance that I know does delectable finger foods locally.  I emailed her and thought I had this in the bag … but, then I got the email that said she wasn’t available.  AGHHH … crikey (of course I cannot …

Cookies While You Sleep: The Fluffiest Meringue Cookies That Make You Feel Like You’re Eating Clouds!

Hello Friend!  I cannot tell a lie … I literally was led to believe at a young age that there were cookies that would magically form into perfect, confection clouds while I was sleeping … and dreaming of sugar plum fairies of course 🙂  Anytime I would ask my baking queen grandmother what these droplets of pure white were called, she was always quick to reply, “Cookies while you sleep”.  I never doubted anything she said, and went on my merry little life always  believing these cookies needed the same dosage of sleep as I did, 8 hours, in order to meet their perfect state.  How could I challenge such a beautiful concept that the lightest, fluffiest cookies would be waiting for me upon sunrise!     Some thirty odd years later I actually had a moment of nostalgia and realized I wanted to make those cookies and was growing frustrated that no one … literally NO ONE … had heard of these.  I somewhat got used to the dismissive, awkward eyes that nudged me off …

Maui Tuna Salad: The Best Maui Inspired Salad

Good Morning TBSH Friends!  It’s a Sunday morning and here in Houston, the sun is out and I have already seen two cyclists merrily stroll their way thru the neighborhood with smiles on their faces – AWESOME!  There is something so contagious about the presence of happiness 🙂     And why stop that feeing so I let my mind wonder quickly to a happy moment of my own: a trip to Maui a few years ago and a salad I became so addicted to at a local joint that I went there at least four (4) times during my vacation.  We stayed in Paia, Hawaii for three weeks and on this particular trip we decided to plan nothing – I mean absolutely no agenda and no calendar … in fact, no watches!  What seemed to naturally form was a lifestyle of everyone waking up at their own time (luckily we all seemed to wake up by 9 in the morning), eat some natural produce like fruit hanging from the trees, and just grab a few …
