Cod Filet: A Recipe That Delivers a Bon Appetite!

The fresh market I was with my mother-in-law in France when choosing the cod for the dish!

Today, I got to be a spy in the kitchen and was the silent observer to my mother-in-law making a cod filet dish that absolutely transcended my attention because the aroma was SO good.  (For my TBSH friends who haven’t been able to follow me lately, I am in France when writing this recipe … Spending time with my French family from my husbands side.  Therefore, this dish has a South of France inspiration to it!). What I found when walking into the kitchen (or, “cuisine” in French) was this fantastic chef surrounded by beautiful ingredients, like a painter with their tools and colors ready to create a masterpiece!  You seriously have to watch this woman when cooking.  She seems absolutely in her element, letting her senses of smell, sight, and touch be her guides.  I could watch her for hours, to be honest!

As she made her masterpiece, I made sure to watch closely (and interrogate her when I feel I may have misinterpreted her intentions with the purpose for a particular step, or ingredient!).  I love this dish because it is one made from only natural ingredients, it isn’t a complicated recipe, and the kids seemed to love it.  So, this will be yet another added to my list 🙂  I equally hope you enjoy!  — XOXO, Bridge

Cut your red onions and fennel into thin slices and place in a bowl.

Slice your lemon zest on long, think slices. The zest comprises of the largest concentration of the lemon flavor and fragrance!

Take your ginger root and slice into thin pieces, placing them into your cooking pan.

Place your cod fish fillets into your cooking pan.

Drizzle your cod fillets with olive oil.

Sprinkle your cod fish filets with lemon zest, fennel, red onion, salt, red grain peppers, Verveine Citronelle, and garlic.
